fresh pineapple chutney

i came across this recipe in the book
quick and simple fresh pineapple chutney
great with meats or seafood, especially if they are grilled
the acidity of the pineapple cuts through to make a refreshing contrast
make this for the next garden barbeque


pineapple chutney

2 small or 1 large pineapple, slightly green
1 tsp salt
1 med red onion, thinly sliced into 1/2 rings**
4 red chillies, seeded and finely chopped
4 garlic large clove, finely chopped
1/4 cup confectioners' sugar or 3 TB sugar to taste

*peel the pineapple by cutting down the outsides in strips.
remove any remaining eyes, then slice the pineapple lengthwise
and remove the tough center core.

rub the pineapple with salt and leave to sit for a few minutes in a colander to draw out some of the juices.
rinse, then chop into small chunks.
dry the pineapple pieces before mixing.

toss all the ingredients together in a bowl.
taste test.
chill in the fridge for an hour before serving.

**use a mandoline to slice the onion paper thin
don't be scare of the amount of garlic the recipe calls for, it's not as garlicky as you think
