SALAD du JOUR: tomato parsley salad


tomato parsley salad...
amazing tomatoes + a bundle of parsley + es trenc flor de sal + freshly cracked black pepper all with a drizzle of mallorquin extra virgin olive oil

pa amb oli


one of my favorite thing to have... pa amb oli is essentially bread with tomato, olive oil and salt, eaten with cured meats or cheese.

pa amb oli

slices of bread
a few cloves of garlic
sea salt
extra virgin olive oil
cheese and cured meats (optional)

toast the bread until golden.
cut the garlic clove and rub it all over one side of the toasted bread surface.
cut a tomato in half and squeeze and rub it all over the surface of the bread surface.
sprinkle some sea salt to taste and drizzle the bread with extra virgin olive oil.

enjoy this amazing simple treat with local cured meats and cheese.

*tomate de ramellet. a type of tomato frequently used in mallorquin cooking and is essential for making a good pa amb oli.
